Air fryer recipes

An air fryer is a small oven with a very powerful fan. That explains its two strengths (it heats up in no time and makes food crispy with very little oil) and its one weakness: overload the basket and the air can't circulate, so everything comes out soggy.

Every recipe in this section gives the exact temperature and time, and tells you when to shake the basket. They're tested in 5-quart baskets; if yours is smaller, cook in two batches rather than piling food up.

If you want to adapt an oven recipe you already have, the tools section has a converter that gives you the air fryer temperature and time directly.

Questions

Frequently asked questions

Do I need to preheat the air fryer?

For almost everything, yes: three minutes at the recipe's temperature. Putting food in cold makes it take longer and, above all, leaves it less crispy because it slowly dries out instead of searing.

How much oil does an air fryer recipe need?

About a teaspoon per serving is usually enough, spread with your hands or a mister rather than poured. With no oil at all vegetables turn leathery and breading won't brown.

Can I use parchment paper in the air fryer?

Yes, but only with food on top and without covering the holes: if you put it in empty to preheat, the fan lifts it into the heating element. Perforated air fryer liners work better.

How do I convert an oven recipe to the air fryer?

The general rule is to lower the temperature by about 25 °F (20 °C), cut the time by around 20 % and start checking earlier than the math says. The tools section has a converter that does it for you.
