Lentils are the best value in any kitchen: dirt cheap, filling, full of iron and fiber, and they get better overnight. This is the everyday Spanish version, with no sausage, where the lentils actually taste like lentils.
All the flavor comes from the sofrito. Ten minutes of onion, pepper and carrot over gentle heat, without rushing, is the difference between good lentils and bland ones. It's the step where everyone hurries and exactly where you shouldn't.
The paprika goes in off the heat. That's the golden rule: in a pan over the flame it burns in five seconds and turns the whole stew bitter with no way back.
A chopped hard-boiled egg on top when serving, or 3½ oz (100 g) of diced smoked tofu sautéed separately. Either brings it up to 28 g of protein per serving.
For the traditional version, add 3 oz (80 g) of sliced Spanish chorizo at the start of the sofrito. It adds about 90 calories per serving.
